In my kitchen, we <3 chai everything.  I’m talking lattes, smoothies, frostings….if it will taste even passably normal after I add copious amounts of cinnamon + cardomen + nutmeg, we’re in. We’re sooooo in.  So these Chai Breakfast Muffins?  They’re a hit.  I actually had a hard time photographing them because Sam and I were both reaching for them as I worked.

Notice how many are missing in these photos.  We seriously can’t stop.

I feel like I should come clean and tell you that I’m eating one right now.  In my pajamas. Catching up on Bobby Flay and pretending I’m not scared of learning how to grill.  I have high goals of one day semi-soon hosting large bbq’s with all my friends coming over and marveling at 1) how awesome my backyard looks and 2) how delicious/put-together/pinterest-perfect the bbq spread is.  In order for this to happen, I’ve determined I probably should learn how to grill, because right now I leave that up to Sam as fire = scary and my patience level = nada.

But I can learn, right? In exchange for some perfectly charred peaches and flaky smoke-infused kabobs, I’m willing to try.

Also, I’m just now realizing I should learn to garden, if we’re going to really live up to my fantasy backyard extravaganza. My lack of knowledge of all things domestic is clearly non-existent. *cue exaggerated sigh*

And cue very, very, VERY weak segway from domesticàhouse because GUESS WHO HAS A HOUSE!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!

Yupppp. In one week EXACTLY, we will be signing no less than one thousand sheets of paper in order to buy OUR FIRST HOUSE.

And no, we won’t be moving in.  Not for quite a while, actually (well, like 4 weeks).  First things first guys: The Kitchen must be gutted. And I really do mean gutted.  You will see pictures, I promise, but not until the renovations have been made so you can compare the before & after.  But in the meantime, I’m semi-seriously refusing to move in. Sam was like “Let’s move in” and I was like “….mmmmm. No.  Kitchen first, pleaseeeeeee?” And then I did my very best to bat my eyelashes at him and convince him that we should renovate before moving in all the way.  Chai Breakfast Muffins may or may not have been used as a selling point, just saying.

Chai Breakfast Muffins (Vegan, GF)

Ingredients
  • 2 ripe bananas
  • ¼ c. greek yogurt (or vegan equivalent, such as coconut yogurt)
  • 2 T. coconut oil
  • ¼ c. honey
  • 1 t. cinnamon
  • ½ t. cardomen
  • ½ t. ground ginger
  • pinch of ground nutmeg
  • 1 t. baking powder
  • ½ t. baking soda
  • ½ t. salt
  • ¾ c. almond flour
  • ¾ c. brown rice flour
  • Optional Glaze:
  • ¼ c. coconut yogurt or greek yogurt
  • 1 T. honey
  • 1-2 t. coconut milk, if needed for consistency
Instructions
  1. Preheat the oven to 350°F.
  2. In a medium bowl, mash the bananas until smooth (or use an electric beater). Add in the rest of the wet ingredients and whisk to combine-you may need to melt the coconut oil first to keep it from clumping.
  3. In another medium bowl, whisk together all the dry ingredients. Slowly fold the dry ingredients into the wet ingredients until just combined, being sure to scrape the sides of the bowl.
  4. Pour 1 T. of batter into prepared muffin tins (either greased or lined with muffin tins). If you have batter leftover, split it evenly into each muffin.
  5. Bake for 20 minutes or until the tops have set and are turning golden. Remove and let cool before whisking together the glaze and spooning over the muffins.

If you’re having weather anything like MN, it’s cold and gray and windy and you’re having trouble pulling yourself out of bed. You hit snooze no less than 11 ½ times (because you accidentally knocked your phone to the ground on attempt no. 12) and you still feel tired and crabby and you’ve decided to move the instigators of Daylight Savings to the top of your hate list because really, getting up an hour earlier in pitch blackness is not worth whatever extra hour of sunlight you get at the end of the day when you’re stuck in traffic anyway.

Anddddd here we are. It’s Saturday night, and I’m in full-on weekend mode.

I pretty much consider myself a very industrious person 98% of the time. I’m always moving. I feel happiest when I’m checking off some sort of interior to-do list and I have this incredibly OCD cleaning habit that keeps me on my feet.

So this was a pretty rough week for me. I was only able to go into work on Friday (I know, I know…I can feel your groans and eye rolls through the internet) and you’re probably majorly judging me for saying this, but laying on my back for 5 days and literally only moving to, 1) pee, 2) see a chiropractor, and 3) reach for those sweet potato muffins I subsisted off is not relaxing for me. AT ALL. I just lay there and stressed about the million and one things I could be doing if only I could walk.
