Bacon Quinoa Salad with Lemon Dijon Dressing

Bacon Quinoa Salad with Lemon Dijon Dressing and Queso Fresco cheese | savoringsimple.comWhew! Man it’s been a while—almost a month! But I have good reason: Sam and I bought a house! And it’s…. a piece of work, to put it bluntly.  We’ve been up to our hairlines, literally, in paint, spackle, sawdust, and lots of spiders that I’m learning to squeal about a little less every time I find them crawling down a wall. 😭

This has been our life since April 7-dead spiders and lots of showers, in a nutshell. It’s worth it, though, because it’s ours and we are slowly but surely making it exactly how we want it.  Slowly. So slowly.

But then when my Dad put in the new cabinets he built two days ago, I got chills thinking about all the memories and and good times and oh my goodness, new recipes that are going to be made in that kitchen. You guys-the FOOD. I can’t wait!

Also did you catch that? My Dad’s making me kitchen cabinets. Coolest. Dad. Ever. !!!!

Today’s recipe is something Sam and I have been subsisting off of this whole month—a Bacon Quinoa Salad that’s got all the flavors and nutrients of a full meal in one easy convenient bowl, because while I spend almost 60 hours a week in the new house, nothing about the kitchen is even remotely functional and all the food has to be brought in every day and stored in the fridge, a.k.a. the only place in the house that’s safe from dust. And spiders.

This recipe is from a guest post I did for Erren’s KitchenErren is this incredible food blogger who I’ve looked up to for quite some time, and I was thrilled when she asked me to post on her blog.  Be sure to check out her site-she takes the most amazing photos and all of her recipes will have you drooling! I’m especially fond of her Ultimate Chocolate Cake….because words like ‘ultimate’ should definitely be paired with something like ‘chocolate’, like, always.

Chai Breakfast Muffins

Chai Breakfast Muffins | savoringsimple.comHow do you feel about chai?

In my kitchen, we <3 chai everything.  I’m talking lattes, smoothies, frostings….if it will taste even passably normal after I add copious amounts of cinnamon + cardomen + nutmeg, we’re in. We’re sooooo in.  So these Chai Breakfast Muffins?  They’re a hit.  I actually had a hard time photographing them because Sam and I were both reaching for them as I worked.

Notice how many are missing in these photos.  We seriously can’t stop.

I feel like I should come clean and tell you that I’m eating one right now.  In my pajamas. Catching up on Bobby Flay and pretending I’m not scared of learning how to grill.  I have high goals of one day semi-soon hosting large bbq’s with all my friends coming over and marveling at 1) how awesome my backyard looks and 2) how delicious/put-together/pinterest-perfect the bbq spread is.  In order for this to happen, I’ve determined I probably should learn how to grill, because right now I leave that up to Sam as fire = scary and my patience level = nada.

But I can learn, right? In exchange for some perfectly charred peaches and flaky smoke-infused kabobs, I’m willing to try.

Also, I’m just now realizing I should learn to garden, if we’re going to really live up to my fantasy backyard extravaganza. My lack of knowledge of all things domestic is clearly non-existent. *cue exaggerated sigh*

And cue very, very, VERY weak segway from domesticàhouse because GUESS WHO HAS A HOUSE!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!?!

Yupppp. In one week EXACTLY, we will be signing no less than one thousand sheets of paper in order to buy OUR FIRST HOUSE.

And no, we won’t be moving in.  Not for quite a while, actually (well, like 4 weeks).  First things first guys: The Kitchen must be gutted. And I really do mean gutted.  You will see pictures, I promise, but not until the renovations have been made so you can compare the before & after.  But in the meantime, I’m semi-seriously refusing to move in. Sam was like “Let’s move in” and I was like “….mmmmm. No.  Kitchen first, pleaseeeeeee?” And then I did my very best to bat my eyelashes at him and convince him that we should renovate before moving in all the way.  Chai Breakfast Muffins may or may not have been used as a selling point, just saying.

Chai Breakfast Muffins (Vegan, GF)
Author:
Prep time:
Cook time:
Total time:
Serves: 12 muffins

Ingredients
  • 2 ripe bananas
  • ¼ c. greek yogurt (or vegan equivalent, such as coconut yogurt)
  • 2 T. coconut oil
  • ¼ c. honey
  • 1 t. cinnamon
  • ½ t. cardomen
  • ½ t. ground ginger
  • pinch of ground nutmeg
  • 1 t. baking powder
  • ½ t. baking soda
  • ½ t. salt
  • ¾ c. almond flour
  • ¾ c. brown rice flour
  • Optional Glaze:
  • ¼ c. coconut yogurt or greek yogurt
  • 1 T. honey
  • 1-2 t. coconut milk, if needed for consistency
Instructions
  1. Preheat the oven to 350°F.
  2. In a medium bowl, mash the bananas until smooth (or use an electric beater). Add in the rest of the wet ingredients and whisk to combine-you may need to melt the coconut oil first to keep it from clumping.
  3. In another medium bowl, whisk together all the dry ingredients. Slowly fold the dry ingredients into the wet ingredients until just combined, being sure to scrape the sides of the bowl.
  4. Pour 1 T. of batter into prepared muffin tins (either greased or lined with muffin tins). If you have batter leftover, split it evenly into each muffin.
  5. Bake for 20 minutes or until the tops have set and are turning golden. Remove and let cool before whisking together the glaze and spooning over the muffins.

Sweet Potato Fries with Garlic Tahini Sauce

This is going to make your week, promise.

If you’re having weather anything like MN, it’s cold and gray and windy and you’re having trouble pulling yourself out of bed. You hit snooze no less than 11 ½ times (because you accidentally knocked your phone to the ground on attempt no. 12) and you still feel tired and crabby and you’ve decided to move the instigators of Daylight Savings to the top of your hate list because really, getting up an hour earlier in pitch blackness is not worth whatever extra hour of sunlight you get at the end of the day when you’re stuck in traffic anyway.

SEE?

I told you—Cranky. Sam and I both have it and so does everyone else I’ve run into this week, minus my friend Anna who quite probably has a heart made of literal sunshine. In the over 10 years I’ve known her, I’ve never ever seen her crabby except for one time when she got hit with a car while she was biking. Which is a legitimate Read more

Raspberry Citrus Smoothie

Raspberry Citrus Smoothie-Vegan and Gluten free | savoringsimple.com

Happy Weekend!

Remember how I was talking about my recent citrus addiction?  Well, it’s not just hitting me in Flourless Lemon Cake form:

Raspberry Citrus Smoothie-a perfect meal replacement or breakfast on the go! | savoringsimple.com

This Raspberry Citrus Smoothie is a pretty fair representation of my kitchen right now, and I don’t regret it for a moment. The mandarin oranges plus the sweet tang of the raspberries makes this a perfect spring breakfast….or lunch….or both.  I drank 1-2 of these every day this week because every moment not at work was spent outside.  I’m almost certain Sam is going to start complaining about the amount of blender food we’re eating soon, because his inner meat lover does not jive with all of my smoothie and sauce and guacamole loving self all the time. He rallies, but he’s not 100% on the I-drink-my-meals train, you know?

So this is more for me and you, the people who understand Spring means Read more
